This is a soft oatcake sandwich with delicious butter icing and a generous centre of strawberry jam. A favourite of my wife. Sold in bags of three, not singly as the picture suggests

Oatcakes
I have long given up on finding decent oatcakes and started making my own. Caithness due to climate is an oat growing district and oats have always figured on the scottish diet whether in porridge, haggis or bannocks (oatcakes). Oatcakes are naturally gluten free but if grown after a crop of wheat then some wheat may be harvested from seeds in the soil. I use a little wheatflour in the recipe but if there was a demand I could substitute another flour and sell them as gluten free.

Papa Hunters Tablet
This recipe uses proper butter, milk and sugar. It should be consumed as a treat. This was my favourite treat when visiting "old papa". The recipe was lost for some 20 years or so but my brother in New Zealand had it written down somewhere and repatriated it. Sadly due to Diabetes I have to restrict myself to a crumb from each batch - purely in the interest of quality control you understand! Originally sold as bars, I have bowed to customer demand and now break up two bars into each bag - really!

Red Cherry Flapjack
This is a traditional flapjack with added cherries. It was a favourite from Asda until they discontinued the line. Flapjack is nice but the cherries make it a winning combination. Sold in bags of 3 bars

Cheese Oatcakes
In developing this recipe I have added extra mature cheddar in hopes of producing a delicious cheese flavour oatcake. I succeeded - and am now making the second batch for private comsumption. Each batch contains 200g of extra mature cheddar cheese. I had anticipated that they would be a perfect accompaniment for cheese but instead they are perfect just as they are.

Peppermint Slice
This has a crunchy base, layer of peppermint fondant with a lattice layer of chocolate. Put into the shop on Thursday along with some samples. Might alternate this product with the Red Cherry Flapjacks as I am running out of space.

Orange & Lime Marmalade
For those of us who love marmalade at breakfast the demise of marmalade in stores has seen a dramatic reduction in choice. Swimming against the tide I have produced Seville orange and lime marmalade. Using fresh limes, there is a distinct lime undertone to the marmalade. Currently in stock.

Praline Cake
This is a single tier cake with a delicious flavour. If you are thinking Victoria Sponge forget it! The sponge has chocolate, almond and coconut adding to the texture and the flavour. Covered in plane white icing and chocolate curls it is very different and delicious. Picture still to come

Black Forrest Gateau
This for some reason has become the birthday cake I make for my wife. It is indulgent with lots of cream, lots of chocolate and real cherries. It has a rustic quality that I like - nothing shop bought about this one.

At the market it dawnwed on me that my customers were unfamiliar with my products.  Having grown up with these recipes they are familiar as apple pie - to me!  There were four new products making their debut.  The orange and lime marmalade was a last minute addition.  The limes add a very distinct flavour - the juice and peel make it very distinctive.  Commercial lime marmalade does not have the same distinct flavour, which makes me wonder where and how it gets lost.  This will become a new "in-stock" product as soon as I can source jam jars.

  • Orange & Lime Marmalade - Seville oranges but with a distinct fresh lime flavour

  • Haggis and vintage cheddar sausage rolls - Halls haggis - one of the best!

  • Praline cake - 3 parts ground almond,dessicated coconut: 1 part self raising flour

  • Rich Banana & Walnut Loaf - I eat this sliced with butter, the nuts give a distinct texture and flavour perfectly complimented by the butter (margarine simply won't do)
